Christmas Amaretto Pudding for slow cooker

Equipment

  • 2 Pint Pudding Basin with Lid
  • Slow Cooker

Ingredients
  

  • 100 g Berries & cherries or cranberries
  • 200 g Mixed dry fruit
  • 100 g Glacé cherries, cut in quarters
  • 1 Zest & juice of 1 medium orange
  • 50 ml Amaretto
  • 50 ml Brandy
  • 100 g Muscovado Sugar
  • 1 tsp Ground mixed spice
  • ½ tsp Ground cinnamon
  • 1 Good grating of fresh Nutmeg
  • 2 Medium eggs beaten
  • 225 g Medium Bramley apple roughly 225g, cored and grated
  • 100 g Vegetarian Suet
  • 50 g Blanched almonds, roughly chopped
  • 85 g Self-raising flour
  • 65 g Fresh white breadcrumbs

Instructions
 

  • Place all the dried fruit, glacé cherries, orange zest & juice, amaretto, brandy, sugar & spices in a large bowl, mix and then leave over night or up to a couple of days.
  • Next when ready to cook, and the remaining ingredients to the soaked fruit mix, (Grated apple, blanched almonds, flour, suet, breadcrumbs and the eggs) and mix to combine well. Scrape the mix into the bowl, place of the mix and a piece of grease proof paper on the top and then clip on the lid.
  • Sit the basin inside the slow cooker with boiling water up to about halfway up, on low setting cook for 10 hours with the slow cooker lid on.
  • If serving later, reheat before serving by slow cooker for 4 hours.
  • Serve with whipped cream with Amaretto.
